How to make Bhindi Masala Dhaba Style – As a kid I remember eating this dish at one of the very famous Dhaba on our road trip to Punjab from Delhi. I still remember the fresh aroma of fennel seeds and tanginess of tomato’s oozing from this dish.
Bhindi Masala is very popular around the northern region of India. After leaving India this is one dish I have missed the most and of course Indian Mc Donalds. This recipe is not complicated but the spices used in this recipe needs to be in a very specific proportion for the best flavor.
Thanks to some of my very best Chef friends back in Delhi, I had the opportunity to visit some local Dhaba’s on my last visit to India and get a look inside their kitchen. I saw this dish being prepared live in front of me and it was amazing. It brought back my childhood memories of this dish. After talking to the Chef’s at Dhaba I realized their trick to getting the best flavors out.

Bhindi Masala ~ Dhaba Style !!

- Mustard Oil - 2 Tbsp
- Bhindi Chopped - 5 Cups
- Turmeric Powder - 1/2 Tsp
- Red Chili Powder - 1 Tbsp
- Salt - 1 Tsp

- Onion - 1 Big
- Ginger Garlic Paste - 2 Tbsp
- Green Chillies - 4
- Tomatoes - 3
- Vegetable or Refined Oil - 2 Tbsp
- Cinnamon - 1 Inch
- Cloves - 6
- Sauf / Fennel Seeds - 1 Tsp
- Turmeric Powder - 1/2 Tsp
- Red Chili Powder - 1/2 Tsp
- Coriander Powder - 2 Tbsp
- Black Pepper Powder - 1/2 Tsp
- Roasted Cumin Powder - 1/2 Tsp
- Garam Masala - 1 Tsp
- Salt - 1 Tsp
- Sugar - 1 Pinch
- Water - 1 Cup
