How to make Raj Kachori – I would like to in the record to say that Raj Kachori is the Baap/Father of all the Chaat’s. Its got a little bit of everything but a whole lot of flavors. I dont think we can call it a snack it should be categorized as a meal in itself.
Its so fulfilling and delicious. Raj Kachori as the name suggests is a kachori chaat. What does Kachori refer to in Raj Kachori ? Well Kachori in this reference is a big Crispy and crunchy outer layer . Think of it as a huge poori or gaolgappa or puchka.
This poori is then stuffed with Bhalla, Dal, potato, papri, Chana, masalas , Dahi (yogurt), Sweet tamarind chutney ,Cilantro Chutney and topped with Thin sev , julienned ginger , Pomegreanate pearls and finally Cilantro.
The only thing I can even compare this to would I guess have to be the Laccha tokri but that is different outer covering made of potato’s.
