Vegetable Pulao | Vegetable Pilaf – Dhaba Style !!

How to make Vegetable Pulao / Pilaf Dhaba Style – Vegetable pulao is a very easy rice dish that can be prepared in under an hour. Its made with very little supervision and super delicious. Vegetable Pulao can be found in any Indian Restaurant and it tastes delicious with any gravy based dish. Serve this with Dhaba Style Raita or any Gravy based dish!!

Ingredients

  • Ghee - 2 Tbsp
  • Jeera / Cumin - 1 Tsp
  • Laung / Cloves - 5
  • Badi Elaichi / Black Cardamom - 2
  • Dalchini / Cinnamon - 1 Inch
  • Tej Patta / Bay Leaf - 2
  • Hari Elaichi / Green Cardamom - 3
  • Onion - 1 Cup
  • Ginger Garlic - 1 Tbsp Crushed
  • Gobi / Cauliflower - 1 Cup
  • Aloo / Potato - 1 Cup
  • Matar / Green Peas - 1/2 Cup
  • Green Beans - 1/2 Cup
  • Gajar / Carrots - 1/2 Cup
  • Kashmiri Red Chilli Powder - 1 Tsp
  • Salt - 2 Tsp
  • Basmati Rice - 2 Cups Soaked 30 to 45 mins
  • Water - 3 Cups

Instructions

  1. Take a Deep Pan and set the heat to medium.
  2. Add Ghee to the pan.
  3. Once the ghee is heated add all Whole spices. Saute for 1 minute. The oil will become fragrant.
  4. Now add Onions to the oil. Cook till onions start to turn Golden.
  5. Add Crushed Giner and Garlic. Cook for another 2 minutes.
  6. Now add all the Vegetables and saute for 3 to 4 minutes.
  7. Add Kashimir red chilli powder and salt. Mix well.
  8. Now add the soaked rice and mix well again.
  9. Add Water and Cover the pan with a lid.
  10. Turn the flame to medium low and let the ricke cook till all the water evaporates.
  11. This would take approximately 6 to 10 minutes. Stir one in between.
  12. Once the water evaporates turn the flame off and let the rice cook in the steam.
