Vodka Pani Puri / Golgappa – Delhi Style !!

How to make Pani Puri / Golgappa Delhi Style – Pani puri goes by many names, Puchka’s , Golgappas and of course pani puri. It is hands down one of the most popular street food in India. Available at any street corner. 

You can make this recipe without Vodka as well but if entertaining friends we recommend adding a bit 🙂

Vodka Pani Puri / Golgappa – Delhi Style !!

    Ingredients

    For Mint Paani / Water

    • Mint Leaves - 1 Cup
    • Cilantro / Dhaniya Leaves - 1.5 Cups
    • Ginger - 2 Inch
    • Green Chillies - 4
    • Chaat Masala - 2.5 Tsp
    • Asafoetida / Hing - 1/4th Tsp
    • Roasted Cumin Powder - 1 Tsp
    • Black Salt - 2 Tsp or According to taste
    • Water - 6 Cups
    • Tamarind / Imli Water - 3/4 Cups
    • Vodka - 60 ml or According to Taste
    • Masala Boondi - 3 Tbsp

    For Stuffing

    • Boiled Potato - 1
    • Boiled Chick Pea / Chana - 1/2 Cup
    • Cilantro - 1.5 Tbsp
    • Black Salt - 1/2 Tsp
    • Chaat Masala - 1/2 Tsp
    • Red Chilli Powder - 1/4 Tsp

    For Assembling

    • Puri - 20
    • Sweet Tamarind Chutney - 4 Tbsp

    Instructions

    For Mint Water

    1. In a grinder / mixer Jar take Mint Leaves, Cilantro Leaves, Ginger, Green Chillies, Chaat Masala, Hing, Roasted Cumin Powder, Black Salt and 1/2 Cup water . Grind till its very fine.
    2. In a deep bowl, add the grinded paste, Water, Tamarind Water, Vodka and Masala Boondi. Mix Well and keep in the refrigerator for cooling.

    For Stuffing

    1. In another bowl, Add all the ingredients for stuffing and mix well. While Mixing mash some chana and Potato.

    GolGappa / Pani Puri

    1. Take 1 puri and make a hole on the top.
    2. Add the Potato and Chana Stuffing.
    3. Add Tamarind Chutney. Dip the puri in mint vodka water so that it is filled with the it.

    Recipe Notes

    If you like Boondi Crispy, add it right before serving.
    You can skip Vodka for regular Golgappa / Pani Puri !!
    Remember only add Tamarind chutney and water when ready to serve , otherwise puri will get soggy.
